Cuba
Been putting off going to Cuba long enough, decided I had to go before travel to Cuba becomes* illegal again for US citizens. Took advantage of some last-minute tour cancellations as well to flex a long weekend in Havana tour into a combined Havana and Vinales Valley tour as well, because everyone I'd talked to said Vinales was beautiful and worth a visit.
* = seems likely history will repeat itself...
Day 1: flying on Thanksgiving day was sub-optimal due to some scheduling changes, but the United Club at LAX least took the opportunity to do a pretty good job with Thanksgiving lunch/dinner, and an earlier than originally planned arrival at IAH meant I could at least do some Black Friday shopping from the hotel.
Day 2: a little United Express flight from Houston to Havana, an unexpectedly high-end tour on arrival (complete with fancy hotel and Mercedes pick-up), and then crusin' in a classic 1959 Chevy Impala convertible that evening, before going for some live music.
Day 3: classic sights in Havana and the surrounding area, capped by the nightly cannon firing the old fortress.
Day 4: morning drive to Vinales Valley, some scenic views both atop and inside mountains, tobacco farm, and Vinales itself.
Day 5: back to Havana including some brief adventuring in the suburbs before flying back home.
