Northern Lights
Being a work day, not too much happening the middle of the trip. Wandered over to KC's Kitchen for lunch, a surprisingly decent Korean spot that opened a few months after my previous trip to Fairbanks. Galbi is not the best quality but is surprisingly legit, cucumber kimchi seasoning is not my favorite style but was pretty good, and the haemul pajeon (seafood pancake) is more pancake than seafood, but still quite tasty. Definitely pack up the dipping sauce to-go for the pancake if you have leftovers (I did-- was easily two meal's worth of food!).
University of Alaska Fairbanks' Museum of the North hasn't changed very much, but was still nice to get out of the hotel for a bit in the afternoon. And was so full from lunch/leftovers, had a Maruchan Cup Noodle chicken wonton that was... uh... best described an extra-large regular cup noodle but kind of extra gross.
