Making some long-overdue stops on my list. Uovo's Santa Monica location lives up to their reputation for very fresh pasta, and if you love watching the kitchen work then definitely take one of the (many) bar seats. Ragu was very good once mixed up to get the flavors from the oil/grease as they suggested, and both the hamachi crudo and the broccolini were excellent. The chicanti (Chicanti Superiore, Castel Trebbio, 2020) was a great value for the price as well. I think the main hangup here is that they don't take reservations and don't seem to have many tables, so they're not convenient for groups.
Churros y platanos is a relatively new food stand and they do a pretty bang-up job with (see a theme?) fresh made churros. That said even the smallest order is six pieces, which is probably about five more pieces than I should be eating...
Dinner the next day crossed off one more pasta place off the list, Sunday Gravy. They have a much more local feel than Uovo (despite both being run by "locals"), with a pretty good if back to basics italian salad. The ragu with beef shortrib was definitely premade pasta, not fresh, but it did the job, even if I find shortrib to be kind of a weird texture to mix with pasta. Finally-- did not notice til I was halfway through my pasta-- my wine never showed up. Debated asking for it to be removed off the check, but at that point it was easier to just pack up and leave given I'd already closed out the bill.
