Sea Stephanie Fish in cooperation with Kali. Pretty damned good but if anything, the work required to prepare live sea urchin, at least for this n00b, was much too distracting from the meal itself. As befits a Michelin 1*, the meal itself was excellent, and the price was actually quite good for take-out from a 1*... so maybe I just need to get better at preparing uni??
