Kind of hard to begrudge pho places in fancypants areas (Beverly Hills, west Los Angeles, etc.) for serving crappy pho, since apparently not enough people in those areas appreciate the authentic stuff? Tripe is a non-existent item and even asking for tendon gets you a funny look, most are more interested in how much money can they spend on a glass of wine or microbrew. I thought I had a glimmer of hope when I saw pork spring rolls, but turns out it was (actually rather good) pork belly (inside fat but not really authentic) spring rolls instead of proper nem nuong cuon.
Pho was as is fancy, too clean and consequently devoid of flavor to be authetic, but not too bad considering. Would've lead to an entirely average rating except for the server at the very end, who managed to splatter me and the whole table with broth as she was cleaning up the dishes. Apologized but failed to actually remediate the situation with even a stack of paper napkins. If you're going to charge Beverly Hills prices I at least expect quality of service to match...
