Think Chipotle, but with Southeast Asian food. Only it doesn't work, because they cook everything separately beforehand, then add it to your bowl together, unlike actual Asian cooking where (mostly) raw ingredients are put together in a big sizzling wok and stir-fried in awesome tastiness.
This whole separately cooked, often cold ingredients thing? Yeah, not so much. The spicy noodle bowl is like some pale execution of what it should be, like you were eating ingredients destined for an MRE after cooking...
